What’s the deal with crust, bread crust, that layer of over cooked bread that clings to the outside of the loaf?

Don’t get me wrong, I love crust, but one of my kids doesn’t yet they will devour the ends of the loaf with gusto, even after I pointed out that it is nothing but crust!

She doesn’t quite get the principal that it’s all the more special if you wait for the ends to slowly draw together as you eat the middle bread.

I still don’t get why she won’t eat run of the mill crust.
